Homemade peanut brittle- recipe

As a young girl I often baked with my grandmother. We spent many happy hours in her kitchen cooking up all sorts of treats. One of our favourites to make was peanut brittle, and I thought I’d share an easy recipe to make your own.

PEANUT BRITTLE

Ingredients
2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1 cup dry-roasted peanuts
1 tbsp butter
1/2 tsp vanilla extract
1/8 tsp baking soda

Directions
Butter a large Sheet Pan and set aside.

Stir together the sugar, corn syrup and water in a Saucepan.

Cook over medium heat, without stirring, until sugar dissolves and mixture comes to a boil.

Boil mixture, without stirring for 12-14 minutes.

Add peanuts and cook, stirring constantly,until the mixture is golden brown.

Remove the saucepan from heat.

Stir in the butter, vanilla and baking soda.

Pour the mixture into your prepared pan.

Cool completely until hardened and then break into pieces.

Store the peanut brittle at room temperature in an airtight container.
