Sago pudding

As a young girl one of my grandmother’s favourite Sunday lunch puddings was sago pudding and I would sit with a bowl of the warm, cinnamon treat savouring every bite.

Ingredients

1 cup of sago soaked in 2 cups of water
1 liter of milk
5 tablespoons of sugar
2 eggs
2 tablespoons of vanilla essence
A pinch of salt
A few cubes of butter
A little cinnamon for sifting over pudding

Method

Cook the milk , soaked sago and salt for about 15 minutes, stirring to avoid sticking to bottom of the pot .

Add the sugar and vanilla and stir.

Take off the heat abd allow to cool before adding the eggs and giving one last stir .

Pour into a greased baking tray and sift over a little cinnamon and put on the cubes of butter .

Bake in a preheated oven 180 degC for about 30-35 minutes .
