To celebrate world baking day, I thought I’d share my bran muffin recipe.
This is the BEST bran muffin I’ve tasted…
I first learnt to make these in 1996. I was 22 years old and working as a temp – chief catering assistant in the kitchen for Telkom.
My very non exciting job basically meant that I got to bake muffins, stack store rooms, chop up food for the chef and dish up way too many meals for the Telkom staff in the cafeteria.
Bran Muffins
Ingredients
1 1/3 cups All-purpose flour
1/2 cup or 125 ml sugar
1 tbsp baking powder
1/4 tsp salt
1 1/2 cups All-Bran cereal
1 cup milk
1 Egg
1 /3 cup vegetable oil
Directions (Makes 12 Muffins)
1. Stir together flour, sugar, baking powder and salt. Set aside.
2. In large mixing bowl, combine cereal and milk . Let stand about 2 minutes or until cereal softens.
3.Add egg and oil. Beat well.
4.Add flour mixture, stirring only until combined. Portion batter evenly into twelve greased 2 1/2-inch muffin pan cups coated with cooking spray.
5. Bake in oven at 200°C for about 20 minutes or until muffins are golden brown. Serve warm.
