Many years ago, I was employed in the Kitchen for Telkom. My position was chief catering assistant and the truth is I mostly stocked ingredients into the store room and spent my day helping the chef to prepare the many meals that flowed through the canteen.
I wont lie, it was hard word and very uninspiring! However, I did walk away after 6 months with the best muffin and banana bread recipes…so, it wasn’t all that bad.
The muffin recipe especially,is one I use regularly, and I love to add my own little extras like banana or raisins.
( The trick to adding fruit to your muffin mix is to add just a little do that the fruit doesn’t consume the recipe but rather compliments it)
Today, I wanted to share the BEST bran muffin recipe that I’ve ever tasted with you, and you can download my recipe card with the link at the bottom.
Bran Muffins
Ingredients
1 1/3 cups All-purpose flour
1/2 cup or 125 ml sugar
1 tbsp baking powder
1/4 tsp salt
1 1/2 cups All-Bran cereal
1 cup milk
1 Egg
1 /3 cup vegetable oil
Directions (Makes 12 Muffins)
1. Stir together flour, sugar, baking powder and salt. Set aside.
2. In large mixing bowl, combine cereal and milk . Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion batter evenly into twelve greased 2 1/2-inch muffin pan cups coated with cooking spray.
4. Bake in oven at 200°C for about 20 minutes or until muffins are golden brown. Serve warm.
