Traditionally only Fish is eaten on Easter Friday.
Here is a yummy recipe for your Friday Night Dinner – serves 1, multiply according to number of guests.
Ingredients
1 x 100g salmon steak
Marinade:
15 ml olive oil
1 spring onion, chopped
15 ml fresh dill, finely chopped
15 ml fresh flat-leaf parsley, finely chopped
7 ml white wine vinegar Zest and juice of ½ lime
Salt
Freshly ground black pepper, to taste
Julienne vegetables:
1 x carrot, peeled and cut
Julienne ½ red pepper, seeded and cut
Julienne ½ green pepper, seeded and cut
Julienne ¼ red onion, thinly sliced
2 baby marrows, cut
Instructions
Mix all the ingredients for the marinade together in a large Glad Freezer Bag. Add the fish, close and toss lightly to cover. Refrigerate for at least 45 minutes. Remove fish from marinade and place with the julienne vegetables into a Glad Bag.
Place bag into microwave and cook in microwave on HIGH for 1 – 1minute and 40 seconds or until fish is cooked. Allow food to rest for 1 minute in bag before removing.
Season to taste. Serve immediately.
